I made a single portion so I kept my ingredients pretty small. The dish is super easy and quick. The couscous takes about 5-10 minutes. I grilled the tofu until they had a crisp outside. Allow the tofu to soak in the marinade as long as possible. You will get the best flavor that way. Honestly, the marinade I used was good, but not great. I don’t think I would use it again. It was just a Ralph’s brand basic marinade. I learned my lesson.
You can use any tomatoes it doesn’t really matter, Roma are just what I had laying around.
I used the bourbon marinade to also cook the onions which took about 3 minutes.
Overall, the dish was good,but next time I will change up my marinade.
