•• TODAYS LUNCH ••

ON MY PLATE :

WATERMELON AND FETA SUMMER SALAD WITH A LEMON AND GARLIC HOMEMADE DRESSING

• 2 SLICES OF WATERMELON DICED
• 1/3 WHITE ONION DICED
• 1 TOMATO DICED
• 1/2 CUCUMBER DICED
• 1/3 FETA CHEESE(more or less to taste)
• 1 AVOCADO

Servings 2-3 medium salads


DRESSING

• 5tbsp EVOO
• 1 LEMON
• 1-2 GARLIC CLOVES
• SALT AND PEPPER TO TASTE
• DASH OF RAW HONEY

The dressing is very simple…you can estimate the amount of ingredients you would like dependent upon how much salad you make.

This is one of my favorite salads. It will stay fresh for a few days and makes for a perfect lunch to take to work.

I try to always use organic ingredients whenever possible.

•• LAST NIGHTS DINNER ••

ON MY PLATE :

BOURBON GLAZED GRILLED TOFU WITH CARAMELIZED ONIONS ON TOP OF COUS COUS WITH FRESH TOMATOES

• ORGANIC FIRM TOFU
• ORGANIC WHITE ONION
• ORGANIC ROMA TOMATOES
• ORGANIC COUS COUS
• RALPHS BOURBON MARINADE

I made a single portion so I kept my ingredients pretty small. The dish is super easy and quick. The couscous takes about 5-10 minutes. I grilled the tofu until they had a crisp outside. Allow the tofu to soak in the marinade as long as possible. You will get the best flavor that way. Honestly, the marinade I used was good, but not great. I don’t think I would use it again. It was just a Ralph’s brand basic marinade. I learned my lesson.

You can use any tomatoes it doesn’t really matter, Roma are just what I had laying around.

I used the bourbon marinade to also cook the onions which took about 3 minutes.

Overall, the dish was good,but next time I will change up my marinade.
